My Culinary Edition of Monday Made It this week has 2 parts! Have I told you I love to bake and cook? Well, I do! Along with teaching, blogging, crafting, and thrifting, it is a passion of mine! This week I made two lovely confections for a party!
1. Triple Lemon Blueberry Cupcakes
My inspiration came from Sweetapolita. She actually made a layered cake with the triple lemon goodness, but I wanted to do something a little more party-friendly. So I decided on cupcakes!
I would love to give you the recipe, but I basically did everything the same in regards to making each part of the cake: the cake, the lemon curd, and the lemon frosting. So head on over to the link above and get the recipe for yourself!
Instead of baking your cake into round pans, line and fill cupcake cups about 3/4 full, and place in the oven for about 25 minutes. The oven I was working with is difficult though, so it may be different for you.
Do this for all your cupcakes. Next, your lemon curd should be cold, if you have had it in the fridge for at least an hour. Spoon it into a plastic baggie, and cut off one of the tips for easy piping. Pipe a little bit of curd into the center of each cupcake, and then put the plug back on top.
