This post is all about saving money!! We all need to, right?!
So, first, did you get the Vistaprint Groupon this summer? Ya know, the one where you only have to pay $17 for $70 worth of goodies? Well, I did, and it expires in 2 days! When I found that out, I got my buns in gear today, finding some GREAT fun things to purchase!

and a car magnet- my personal favorite! The story behind this comes from Elizabeth. She got a magnetic sign made similar to this, and cut out all the supplies, so she can put on the board what supplies her students will need for the day/lesson. SO SMART that I had to copy her!! The clipart comes from Doodle Darlin! |
And for all of this awesome stuff, I only had to pay for my shipping! So great!

I am also getting into the reselling business! I want to make a little money on the side, and so I decided to start reselling clothing items on eBay! I go to Goodwill and pick through tons of clothing to find the unique and brand name pieces (highlight on the ones that are on sale that day), and then resell them on eBay! The great thing about Goodwill is you get a 10% discount for being a teacher! Woo hoo! I made my first trip last week and paid $20 for 10 great items of clothing that are now being sold here:

My third thrifty part of the post today is my first FOODIE WEEK recipe! I made it for my family tonight, and it was the perfect Monday night dinner- warm, easy, and thrifty! Almost ALL of the ingredients came from my pantry!
Quickie Turkey Chili with Easy Cornbread
Chili Ingredients:
2 Tablespoons EVOO
1 onion, chopped
2 minced garlic cloves
1.25 pounds of ground turkey
2 Tablespoons chili powder
1/2 tsp. ground black pepper
1/2 tsp. ground cumin
1 can black beans, drained
1 can pinto beans, drained
1 can diced tomatoes
1-2 cups chicken stock
1 cup corn kernels (canned or frozen, thawed)
Salt to taste
Cornbread Ingredients:
1 package Betty Crocker cornbread, mixed up
1/2 cup corn
The How-To
1. Drizzle EVOO in a big pot, or dutch oven, and add onion and garlic.
2. Saute together until onion is translucent and browned.
3. Add ground turkey and break apart.
4. Add in spices while turkey is still browning, and let cook 5 more minutes, stirring occasionally.
5. “The Dump Truck”: corn, beans, tomatoes, and 1 cup chicken stock, and let cook for 5-10 minutes, stirring occasionally, letting the flavors meld.
6. While cooking the chili, mix up the cornbread mix. Add in the corn.
Bake the bread at 400 degrees for about 15 minutes. (Follow the mix).
Tada!
7. Taste the delicious chili, and add salt to taste, and more spices if you wish!
I hope you get to make this homey meal for your family! I like to call this a “kitchen sink” meal that doesn’t dirty the kitchen sink! It’s a one-pot meal! Yay!
