
Here’s what was in our basket this month:
So what did I make?

And boy, they were DELICIOUS. I think it may be my new favorite dessert, especially for fall! So, here’s the recipe!
You will need:

Crust/Crumble
1.5 cups flour
3/4 cup butter
1 1/8 cups brown sugar
1 1/8 cups oatmeal
Cheesecake Filling
12 oz. regular cream cheese
1.5 tsp Vanilla Extract
3/8 cup brown sugar
3/8 cup sour cream
1 egg
Apples
3 Apples
1.5 tsp cinnamon
3 Tbls brown sugar
1.5 cups butterscotch chips
STEP ONE: MAKE CRUST/CRUMBLE

Place butter, brown sugar, flour, and oatmeal in food processor, and process until mixture is combined and is pea-sized.
Reserve about 1/3 of the mixture for the crumble on top.

Press about 2/3 of the mixture in the bottom of a 9×13 inch pan. The crust should just cover the bottom of the pan.
Bake the crust for about 10 minutes at 350 degrees, until just golden brown.

STEP TWO: MIX UP THE CHEESECAKE FILLING.

Beat the cream cheese until smooth.

Add in brown sugar and vanilla and continue to beat.

Stir in sour cream.

Beat in egg.

Make sure the filling is nice and smooth, and set aside.
STEP THREE: MIX UP APPLES

Peel and dice the apples of your choosing to resemble equal chunks (so they will cook evenly in the oven).

Add in the cinnamon and brown sugar.

Mix everything together so the apples are evenly coated with the brown sugar and cinnamon.
STEP FOUR: ASSEMBLY
Take your slightly cooled base and spread the cheesecake filling on it evenly.

Then sprinkle on the apples evenly.
Mix the butterscotch chips in with the reserved crumble. (I did not do this, but topped the bars with the chip in the end. I wish I would have done this instead!)

Top the bars with the crumble.
Bake bars for 20-25 minutes at 350 degrees.
Let cool and set before slicing and devouring enjoying!
